Prepare the Calamari
In a shallow bowl, mix flour, cornstarch, salt, black pepper, and cayenne pepper. In another bowl, whisk together the egg and buttermilk.

Coat the Calamari
Dip each calamari steak into the buttermilk mixture, then dredge in the flour mixture until well coated.

Fry the Calamari
In a large skillet, heat vegetable oil over medium-high heat. Fry the coated calamari steaks for 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.

Prepare the Avocado Sauce
In a blender, blend the avocado with lime juice, salt, and a splash of water until smooth.

Warm the Tortillas
Warm the corn tortillas in a dry skillet or microwave until pliable.

Assemble the Tacos
On each tortilla, layer shredded cabbage, fried calamari, a drizzle of avocado sauce, pico de gallo, and crumbled queso fresco.

Serve
Serve the calamari tacos with lime wedges on the side.
