    Prepare the Beef Taco

    In a skillet, brown the ground beef over medium heat. Drain excess fat. Add taco seasoning and a splash of water, stir, and simmer for about 5 minutes. Set aside.

    Make the Cheese Enchiladas

    Preheat the oven to 350°F (175°C). Warm the corn tortillas in a skillet. Spread refried beans on each tortilla, sprinkle with cheese, roll them up, and place in a baking dish. Top with more cheese and bake for 15-20 minutes until the cheese is melted and bubbly.

    Prepare the Chile Rellenos

    Roast the green chili peppers until charred, then peel and deseed them. Stuff each pepper with cheese, dip in egg batter, and fry in hot oil until golden brown. Drain on paper towels.

    Make the Beef Flautas

    Fill flour tortillas with the cooked ground beef, roll tightly, and secure with toothpicks. Fry in hot oil until crispy and golden brown. Drain on paper towels.

    Arrange the cheese enchiladas, chile rellenos, beef tacos, and flautas on a platter. Serve with sour cream, salsa, guacamole, and fresh cilantro on the side.
