    Searing the Beef

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the beef with salt and pepper, then sear it on all sides until browned, about 4-5 minutes per side.

    Sautéing Aromatics

    Remove the beef from the pot and set aside. In the same pot, add the chopped onion and sauté until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.

    Adding Ingredients

    Return the beef to the pot. Add the canned diced tomatoes, beef broth, chili powder, cumin, paprika, and bay leaf. Stir to combine.

    Simmering

    Bring the mixture to a simmer, then cover the pot and reduce the heat to low. Let it cook for 2-3 hours, or until the beef is fork-tender.

    Shredding the Beef

    Once the beef is cooked, remove it from the pot and shred it with two forks. Return the shredded beef to the pot and stir to combine with the sauce.
