Preparation and Smoking

Prepare the Turkey
Trim the whole turkey to remove excess fat and skin. Rinse and pat dry with paper towels.

Apply the Rub
Generously rub the pitmaster rub all over the turkey, ensuring even coverage.

Prepare the Smoker
Preheat your smoker to 225°F (107°C) using your choice of wood chips.

Smoke the Turkey
Place the turkey in the smoker and smoke for 4 hours, or until the internal temperature reaches 165°F (74°C).
Serving

Slice and Serve
Remove the turkey from the smoker and let it rest for 15-20 minutes before slicing. Serve half a pound of turkey on a tray with Alabama white sauce drizzled on top and your choice of two sides.
