Preparation

    Trim the Brisket

    Hand trim the Angus beef brisket to remove any excess fat, leaving a layer to keep the meat moist during cooking.

    Apply the Rub

    Mix together the kosher salt and black pepper. Rub the mixture all over the brisket, ensuring an even coating.

Smoking

    Prepare the Smoker

    Preheat your smoker to 225°F (107°C) using your choice of wood chips for flavor, such as hickory or oak.

    Smoke the Brisket

    Place the brisket in the smoker and cook for approximately 15 hours, or until the internal temperature reaches 195°F (90°C).

Serving

    Carve and Serve

    Remove the brisket from the smoker and let it rest for at least 30 minutes. Carve to order and serve half a pound on a tray with your choice of two sides. Pour the classic red sauce over the brisket before serving.
