    Cook the Sausage

    In a skillet over medium heat, cook the merguez sausage links until browned and cooked through, about 8-10 minutes. Remove from heat and set aside.

    Prepare the Spiced Yogurt

    In a bowl, combine Greek yogurt, cumin, paprika, salt, and black pepper. Mix well and set aside.

    Toast the Buns

    Slice the Moroccan buns in half and toast them lightly on a skillet or in a toaster until golden brown.

    Assemble the Burger

    On the bottom half of each bun, place a cooked merguez sausage link, followed by a slice of white cheddar cheese. Add pickled red onions and a handful of arugula on top. Spread a generous amount of spiced yogurt on the top half of the bun.

    Close the burger with the top half of the bun and serve immediately.
