Prepare the Chicken or Cauliflower
If using chicken, cut the chicken breasts into bite-sized pieces. For cauliflower, break the florets into smaller pieces.

Marinate the Chicken or Cauliflower
In a bowl, combine soy sauce, chili-garlic sauce, ginger, garlic, cornstarch, and water. Add the chicken or cauliflower to the mixture and marinate for at least 30 minutes.

Fry the Chicken or Cauliflower
Heat oil in a large frying pan over medium-high heat. Once hot, add the marinated chicken pieces or cauliflower florets. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Combine and Serve
Add the crispy chicken or cauliflower back to the pan with the sautéed vegetables. Toss to combine. Serve over steamed rice.
