Method

Marinating the Steak

Prepare the Marinade

In a medium bowl, combine olive oil, lime juice, minced garlic, ground cumin, chili powder, salt, and black pepper. Whisk together until well mixed.

Marinate the Steak

Place the flank steak in a large resealable plastic bag. Pour the marinade over the steak, seal the bag, and massage the marinade into the meat. Refrigerate for at least 1 hour, preferably overnight.

Preheat the Grill

Preheat your grill to high heat (about 400-450°F).

Grill the Steak

Remove the steak from the marinade and let any excess marinade drip off. Place it on the hot grill and cook for about 4-6 minutes on each side for medium-rare, or until desired doneness.

Rest the Steak

Once cooked, remove the steak from the grill and let it rest for 5 minutes before slicing.

Chop the Toppings

While the steak is resting, finely chop the white onion and roughly chop the cilantro.

Warm the Tortillas

Warm the corn tortillas on the grill for about 30 seconds on each side until pliable.

Assemble the Tacos

Slice the rested flank steak against the grain into thin strips. Place a few strips on each tortilla, top with chopped onion and cilantro, and serve immediately.
