Preparation

1. Soak the Black Beans

Rinse the black beans under cold water. Place them in a large bowl and cover with water. Let them soak overnight or for at least 8 hours.

2. Cook the Black Beans

Drain and rinse the soaked black beans. In a pot, combine the beans with 3 cups of fresh water. Bring to a boil, then reduce the heat to low and cover. Let the beans simmer for about 1 hour or until they are tender. Check occasionally and add more water if necessary.

3. Sauté Aromatics

In a separate skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 5 minutes, or until translucent. Add the minced garlic and cumin, and sauté for an additional 2 minutes until fragrant.

4. Combine and Season

Once the beans are cooked, drain them if there is excess water. Add the sautéed onion and garlic mixture to the beans. Stir in salt and black pepper to taste, along with the lime juice and chopped cilantro.

5. Serve

Serve the seasoned black beans warm as a side dish or as a filling for tacos, burritos, or salads.
