Method

Steak Preparation

  1. 1

    Season the Steak

Pat the ribeye steaks dry with paper towels. Season both sides generously with salt and black pepper. Let them sit at room temperature for about 30 minutes to enhance flavor and tenderness.

  2. 2

    Preheat the Pan

Heat a cast-iron skillet or heavy frying pan over medium-high heat for about 5 minutes until it is very hot.

  3. 3

    Oil the Pan

Add 2 tablespoons of olive oil to the hot skillet, swirling to coat the bottom evenly.

  4. 4

    Sear the Steak

Place the seasoned ribeye steaks in the skillet. Sear without moving them for 4-5 minutes until a crust forms.

  5. 5

    Add Aromatics

Add the garlic cloves (smashed with the skin on) and rosemary sprigs to the pan. After 4-5 minutes, flip the steaks and add these aromatics to infuse flavor.

  6. 6

    Finish Cooking

Cook for another 3-4 minutes for medium-rare, adjusting time according to your preferred doneness. Use a meat thermometer to check: 130°F (54°C) for medium-rare.

  7. 7

    Rest the Steak

Remove the steaks from the skillet and let them rest on a cutting board for 5-10 minutes before slicing. This allows the juices to redistribute.

Optional Sides Preparation

  1. 8

    Prepare the Asparagus

Trim the ends of the asparagus and toss them with olive oil, salt, and pepper. Grill or sauté in a pan for 5-7 minutes until tender.

  2. 9

    Roast the Potatoes

Preheat the oven to 400°F (200°C). Cut the potatoes into wedges, toss with olive oil, salt, and pepper, and roast for 30-35 minutes until crispy.
