Preparation Steps

    Prepare the Shrimp

    In a bowl, combine the shrimp with olive oil, salt, black pepper, garlic powder, and cumin. Toss until the shrimp are well coated. Let marinate for 15 minutes.

    Cook the Bacon

    In a large skillet over medium heat, cook the Applewood bacon until crispy. Once cooked, remove from the skillet and place on paper towels to drain excess grease. Once cooled, crumble into small pieces.

    Cook the Shrimp

    In the same skillet with the bacon grease (add a little olive oil if necessary), add the marinated shrimp and cook for about 3-4 minutes on each side or until the shrimp are pink and opaque. Remove from heat.

    Assemble the Quesadilla

    On half of each tortilla, layer the shredded cheddar cheese, Monterey Jack cheese, cooked shrimp, crumbled bacon, and pico de gallo. Fold the other half of the tortilla over to close.

    Grill the Quesadilla

    In the same skillet (or a clean one), heat over medium-high heat. Place the quesadilla in the skillet and cook for about 3-4 minutes on each side or until the tortillas are golden brown and the cheese is melted. Repeat with remaining quesadillas.

    Serve

    Cut the quesadillas into wedges and serve hot with sour cream and salsa on the side.
