Method
Cooking the Pasta
Boil the Pasta
In a large pot, bring water to a boil. Add a pinch of salt, then stir in the elbow macaroni. Cook according to package instructions until al dente, about 8-10 minutes. Once done, drain the pasta and set aside.
Making the Cheese Sauce
Prepare the Roux
In a medium saucepan over medium heat, melt the unsalted butter. Once melted, whisk in the all-purpose flour, stirring constantly for about 1-2 minutes until it turns a light golden color.
Add the Milk
Gradually pour in the milk while continuing to whisk. Keep stirring until the mixture thickens, about 5-7 minutes.
Incorporate the Cheese
Remove the saucepan from heat and stir in the sharp cheddar cheese until fully melted and smooth. Season with salt, black pepper, and paprika. Mix well to combine.
Combining and Baking
Combine Pasta and Sauce
In a large mixing bowl, combine the drained pasta with the cheese sauce. Stir until the pasta is evenly coated.
Prepare for Baking
If using, preheat your oven to 350°F (175°C). Pour the mac and cheese mixture into a greased baking dish. If desired, sprinkle breadcrumbs and parmesan cheese on top for a crispy finish.
Bake
Bake in the preheated oven for 20-25 minutes until the top is golden brown and bubbly. Remove from the oven and let it cool for a few minutes before serving.
