Method

Shrimp Preparation

  1. 1

    Marinate the Shrimp

In a bowl, combine olive oil, garlic powder, paprika, salt, black pepper, and lime juice. Add the jumbo shrimp and toss to coat evenly. Let marinate for at least 15 minutes.

  2. 2

    Grill the Shrimp

Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers. Grill for 2-3 minutes per side or until the shrimp are opaque and cooked through. Remove from grill and sprinkle with chopped fresh cilantro.

Cilantro Lime Rice Preparation

  1. 3

    Cook the Rice

In a medium saucepan, bring 2 cups of water to a boil. Add the white rice and salt. Reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and water is absorbed.

  2. 4

    Flavor the Rice

Once the rice is cooked, remove it from heat and let it sit for 5 minutes. Fluff with a fork, then stir in lime juice and chopped fresh cilantro.

Broccoli Preparation

  1. 5

    Prepare the Broccoli

While the shrimp and rice are cooking, steam the broccoli florets until bright green and tender, about 5-7 minutes.

  2. 6

    Season the Broccoli

Drizzle steamed broccoli with olive oil and sprinkle with salt to taste. Toss gently to combine.
