Grilled Atlantic Salmon Recipe

Method

Preparing the Salmon

    Marinate the Salmon

    In a bowl, combine olive oil, lemon juice, garlic powder, salt, and black pepper. Place the salmon fillets in the marinade, coating them well. Let them marinate for at least 15 minutes.

    Grill the Salmon

    Preheat the grill to medium-high heat. Once heated, place the marinated salmon fillets on the grill. Cook for about 4-5 minutes on each side or until the salmon is cooked through and has nice grill marks.

Cooking the Broccoli

    Steam the Broccoli

    In a pot, bring 1 cup of water to a boil. Add the broccoli florets and a pinch of salt. Cover the pot and steam for about 5-7 minutes or until the broccoli is tender but still vibrant green.

Cooking the Rice

    Prepare the Rice

    In a saucepan, combine 1 cup of white rice, 2 cups of water, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes or until the rice is tender and the water is absorbed.

Making Scampi Butter

    Prepare Scampi Butter

    In a small saucepan over medium heat, melt the unsalted butter. Once melted, add minced garlic and sauté for 1-2 minutes until fragrant. Remove from heat and stir in chopped parsley, lemon juice, and salt to taste.
