Prepare the Batter
In a bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold beer or sparkling water until the batter is smooth and thick.

Heat the Oil
In a deep pot or fryer, heat the oil to 350°F (175°C).

Fry the Cod
Dip each cod fillet into the batter, ensuring it is fully coated. Carefully place the battered cod into the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Potatoes
Peel the potatoes and cut them into long, thin strips for fries.

Heat the Oil
In a deep pot or fryer, heat the oil to 350°F (175°C).

Fry the Potatoes
Carefully add the potato strips to the hot oil in batches. Fry for about 4-6 minutes until they are golden brown and crispy. Remove and drain on paper towels. Season with salt to taste.
Black & Blue Slaw

Prepare the Vegetables
Shred the green and red cabbage, and grate or julienne the carrots.

Mix the Dressing
In a bowl, combine mayonnaise, apple cider vinegar, salt, and black pepper to make the dressing.

Combine Slaw
In a large bowl, toss the shredded cabbage, carrots, and blue cheese with the dressing until evenly coated. Adjust seasoning with additional salt and pepper to taste.
Tartar Sauce

Mix the Tartar Sauce
In a bowl, combine mayonnaise, dill pickle relish, lemon juice, chopped capers, salt, and black pepper. Stir well until all ingredients are combined.
