Preparation of Vegetables

Chop the Cabbage

Remove the outer leaves of the green and red cabbage. Cut them in half, remove the core, and slice them thinly into strips. Measure out 4 cups of green cabbage and 1 cup of red cabbage and place in a large mixing bowl.

Grate the Carrot

Peel the carrot and use a grater to shred it into fine pieces. Measure out 1 cup of grated carrot and add it to the mixing bowl with the cabbage.

Chop the Green Onion

Wash and trim the green onions. Slice them thinly, including the green tops. Measure out 1 cup and add it to the bowl.

Making the Dressing

Combine Ingredients

In a separate bowl, mix together 1 cup of mayonnaise, 2 tablespoons of apple cider vinegar, 1 tablespoon of sugar, 1 teaspoon of salt, and 1 teaspoon of black pepper. Whisk until smooth and fully combined.

Combine Dressing and Vegetables

Pour the dressing over the chopped vegetables in the mixing bowl. Toss well to ensure all the vegetables are evenly coated with the dressing.

Chilling and Serving

Chill the Coleslaw

Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld together.
