Melt the Cheeses
In a medium saucepan over low heat, combine the sharp cheddar cheese, Monterey Jack cheese, and cream cheese. Stir continuously until melted and smooth.

Add Milk
Gradually add the milk while stirring. Continue to mix until the queso reaches your desired consistency.

Incorporate Other Ingredients
Add the diced tomatoes with green chilies, ground cumin, garlic powder, salt, and black pepper. Stir until well combined.

Simmer
Allow the queso to simmer on low heat for about 5-10 minutes, stirring occasionally. If desired, add fresh cilantro just before serving.

Cut the Tortillas
Stack the corn tortillas and cut them into triangles or strips, depending on your preference.

Heat the Oil
In a large, deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add a handful of tortilla triangles to the hot oil. Fry until golden brown and crispy, about 2-3 minutes per batch. Remove with a slotted spoon and drain on paper towels.

While the chips are still warm, sprinkle with salt to taste. Repeat frying with the remaining tortillas.
