Calamari Preparation

Prepare the Calamari
In a large bowl, combine the flour, cornstarch, salt, black pepper, and paprika. Mix well.

Coat the Calamari
Dip each calamari ring into the beaten eggs, then dredge in the flour mixture until fully coated. Set aside on a plate.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove and drain on paper towels.

Simmer the Sauce
Add the crushed tomatoes, dried oregano, salt, black pepper, sugar, and chopped basil. Stir to combine and let simmer for 15-20 minutes on low heat, stirring occasionally.
