Method

Blackened Shrimp

  1. 1

    Prepare the spice mix

In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried oregano, salt, and black pepper. Mix well.

  2. 2

    Season the shrimp

Pat the baby shrimp dry with paper towels. In a large bowl, toss the shrimp with the spice mix until evenly coated.

  3. 3

    Cook the shrimp

Heat olive oil in a skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes until they are pink and cooked through, stirring frequently. Remove from heat and set aside.

Spicy Slaw

  1. 4

    Combine the slaw ingredients

In a large bowl, mix together the shredded cabbage, grated carrot, minced jalapeño, and chopped cilantro.

  2. 5

    Make the dressing

In a separate small bowl, whisk together lime juice, mayonnaise, salt, and black pepper.

  3. 6

    Toss the slaw

Pour the dressing over the cabbage mixture and toss until everything is well coated. Allow to sit for 10 minutes for the flavors to meld.

Taco Assembly

  1. 7

    Warm the tortillas

Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until warm.

  2. 8

    Assemble the tacos

Place a generous spoonful of blackened shrimp onto each tortilla. Top with spicy slaw and a few slices of avocado.

  3. 9

    Serve

Serve the tacos with lime wedges on the side for squeezing over the top.
