Soak the Beans

In a large bowl, soak the dried navy beans in water overnight. This will help soften them and reduce cooking time.

The next day, drain the soaked beans and rinse them under cold water.

Cook the Beans

In a large pot, combine the soaked beans with 4 cups of fresh water. Bring to a boil, then reduce heat to a simmer. Cook for about 1 to 1.5 hours, or until the beans are tender. Drain and set aside.

Prepare the Sauce

In a large mixing bowl, combine brown sugar, ketchup, molasses, Dijon mustard, apple cider vinegar, Worcestershire sauce, salt, and black pepper. Mix well until smooth.

Sauté Vegetables

In a skillet over medium heat, sauté the chopped onion and minced garlic until the onion is translucent, about 5-7 minutes.

Combine Ingredients

In the pot with the cooked beans, add the sautéed onion and garlic, the sauce mixture, and the optional cooked bacon if using. Stir to combine everything evenly.

Bake the Beans

Preheat your oven to 350°F (175°C). Transfer the bean mixture to a baking dish and cover it with aluminum foil. Bake for 1 hour, then remove the foil and bake for an additional 15-30 minutes, until the sauce is thick and bubbly.

Once done, remove from the oven and let cool for a few minutes. Serve warm as a side dish or main course.
