Prepare the Tofu
Drain the tofu and press it to remove excess moisture. Cut it into thin strips.

Cook the Vermicelli Noodles
Boil water in a pot, add the vermicelli noodles, and cook according to package instructions (usually about 3-5 minutes). Drain and rinse under cold water.

Prepare the Fillings
Wash and chop the lettuce into small pieces. Prepare the pickled carrots and daikon if not pre-made. You can use store-bought or homemade pickles.

Prepare the Sauce
In a bowl, mix the soy sauce, peanut butter, honey, lime juice, water, and chili flakes until smooth.

Soften Rice Paper
Fill a wide bowl with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes pliable. Remove it carefully and lay it flat on a clean surface.

Roll the Wrapper
Fold the sides of the rice paper over the filling, then roll it from the bottom up tightly to secure the filling. Repeat this process for the remaining rice paper and filling.

Arrange the winter rolls on a platter. Serve with the prepared sauce for dipping.
