Rice Preparation
1. Cook the Jasmine Rice
Rinse 1 cup of jasmine rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 2 cups of water. Bring it to a boil over high heat.
2. Simmer the Rice
Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15 minutes or until the water is absorbed and the rice is tender. Remove from heat and let it sit covered for another 5 minutes.
Protein Preparation
3. Marinate the Chicken
Cut the chicken breast into bite-sized pieces. In a bowl, combine the chicken pieces, 3 tablespoons of soy sauce, and 2 tablespoons of sesame oil. Mix well and let it marinate for at least 15 minutes.
4. Cook the Chicken
In a large skillet, heat a little oil over medium heat. Add the marinated chicken and cook until it is golden brown and cooked through, about 8-10 minutes. Remove from the skillet and set aside.
Vegetable Preparation
5. Prepare the Vegetables
While the chicken is marinating, slice the red bell pepper and carrot into thin strips. Chop the green onions and set aside.
6. Stir-Fry the Vegetables
In the same skillet used for the chicken, add the minced garlic and ginger. Sauté for about 1 minute until fragrant. Add the sliced bell pepper and carrot, and stir-fry for about 3-4 minutes until they are tender but still crisp. Add the green onions and stir for another minute.
Assembly
7. Combine Everything
Return the cooked chicken to the skillet with the vegetables. Add the fresh basil leaves, black pepper, and chili flakes. Stir well to combine and heat through for about 2 minutes.
8. Serve
Fluff the cooked jasmine rice with a fork and serve it on plates. Top with the chicken and vegetable mixture. Enjoy your BLU BASIL!
