Preparation
Prepare the Udon Noodles
Bring a large pot of water to a boil. Add the Udon noodles and cook according to package instructions, usually about 8-10 minutes. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.
Slice the Vegetables
While the noodles are cooking, julienne the carrots and bell pepper. Chop the green onions, separating the green tops from the white parts. Mince the garlic and ginger.

Stir-fry the Vegetables
In a large wok or skillet, heat 1 tablespoon of sesame oil over medium-high heat. Add the minced garlic and ginger, and stir-fry for about 30 seconds until fragrant. Add the sliced carrots, bell pepper, and the white parts of the green onions. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
Add the Noodles and Sauce
Add the cooked Udon noodles to the stir-fried vegetables. In a small bowl, mix together the soy sauce, oyster sauce, and chili paste. Pour the sauce over the noodles and vegetables, tossing everything together to combine well. Stir-fry for an additional 2-3 minutes until heated through.
Finishing Touches
Garnish and Serve
Squeeze the juice of the lime over the stir-fry and toss again. Remove from heat, and garnish with the green tops of the green onions and sesame seeds. Serve immediately.
