Preparing the Filling

Prepare Vegetables

Wash and julienne or slice all the vegetables: carrots, cucumber, bell pepper, and red cabbage. Set aside in a large mixing bowl.

Add Herbs

Add fresh mint and cilantro leaves to the bowl with the vegetables. Gently toss to combine.

Prepare Avocado

Cut the avocado in half, remove the pit, and slice the flesh. Set aside for assembly.

Making the Dipping Sauce

Combine Sauce Ingredients

In a small bowl, whisk together soy sauce, peanut butter, honey, lime juice, water, and chili flakes until smooth and well combined.

Assembling the Spring Rolls

Soften Rice Paper

Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds, or until soft and pliable.

Fill the Wrapper

Place the softened rice paper on a clean, flat surface. In the center, lay a small handful of the vegetable mixture and a couple of slices of avocado.

Roll the Spring Roll

Fold the sides of the rice paper over the filling, then roll it up from the bottom to the top, ensuring the filling is tightly secured. Repeat for remaining wrappers and filling.

Arrange the spring rolls on a serving plate and serve with the dipping sauce on the side.
