Preparing the Noodles

Cook the Vermicelli Noodles
Bring a pot of water to a boil. Add the vermicelli noodles and cook according to package instructions, usually about 3-4 minutes until tender. Drain and rinse under cold water to stop cooking. Set aside.

Drain the firm tofu and press it to remove excess moisture. Cut it into small cubes. In a pan over medium heat, add a little oil and sauté the tofu until golden brown, about 5-7 minutes. Add soy sauce in the last minute of cooking, stirring to coat the tofu evenly.

In a small bowl, combine peanut butter, lime juice, honey, water, minced garlic (finely chop or use a garlic press), and salt. Whisk until smooth and well combined. Adjust salt and sweetness to taste.
