Method

Marinate the Protein

    Prepare Marinade

    In a bowl, mix soy sauce, honey, minced garlic, rice vinegar, and fish sauce until well combined.

    Marinate Pork

    Place the pork tenderloin in a resealable plastic bag or dish and pour half of the marinade over it. Seal and refrigerate for at least 30 minutes.

    Marinate Shrimp

    In another bowl, toss the shrimp with the remaining marinade and let it sit for about 15-20 minutes.

Prepare the Noodles and Vegetables

    Cook Vermicelli Noodles

    Bring a pot of water to a boil. Add the vermicelli noodles and cook according to package instructions until tender. Drain and rinse under cold water.

    Prepare Vegetables

    Shred the carrots and daikon radish. Wash and dry the lettuce leaves. Chop the fresh cilantro.

Grill the Protein

    Grill Pork Tenderloin

    Preheat the grill to medium-high heat. Remove the pork from the marinade and grill for about 6-8 minutes on each side or until the internal temperature reaches 145°F (63°C). Let it rest before slicing.

    Grill Shrimp

    Grill the marinated shrimp for about 2-3 minutes on each side until they are opaque and cooked through.

Assemble the Summer Rolls

    Prepare Rice Paper

    Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds until soft but not overly mushy.

    Fill and Roll

    Place the softened rice paper on a clean surface. Add a lettuce leaf, a small handful of vermicelli noodles, a few pieces of grilled pork, grilled shrimp, shredded carrots, shredded daikon, and fresh cilantro. Fold the sides of the rice paper over the filling, then roll from the bottom to the top, keeping it tight.

    Repeat

    Continue the process with the remaining rice paper wrappers and filling ingredients.

Serve

    Slice and Serve

    Serve the summer rolls immediately with chili sauce or your favorite dipping sauce on the side.
