In a large pot, bring water to a boil. Add the udon noodles and cook according to package instructions, usually about 8-10 minutes, until tender. Drain and rinse under cold water to stop the cooking process, then set aside.

Add minced garlic and grated ginger to the hot oil. Sauté for about 30 seconds until fragrant.

Add the broccoli florets, sliced bell pepper, julienned carrot, and snow peas. Stir-fry for about 3-5 minutes until the vegetables are tender but still crisp.

Add the cooked udon noodles to the wok along with soy sauce, sesame oil, and brown sugar. Toss everything together, ensuring that the noodles and vegetables are evenly coated in the sauce.

Add the sliced green onions and stir-fry for an additional minute. Adjust seasoning if necessary.
