Filling Preparation

Prepare the Vermicelli Noodles
Boil water in a pot and add the vermicelli noodles. Cook for about 3-5 minutes until soft. Drain and rinse with cold water to stop the cooking process. Set aside.

Prepare the Vegetables
Julienne the carrots and daikon radish into thin strips. Wash and dry the lettuce leaves. Rinse the cilantro and remove any thick stems.

Make the Pickling Solution
In a bowl, mix together the rice vinegar, sugar, salt, and water until the sugar is dissolved.

Pickle the Carrots and Daikon
Add the julienned carrots and daikon to the pickling solution. Let them sit for at least 30 minutes to absorb the flavors.
Assembling the Spring Rolls

Soften the Rice Paper
Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds until it becomes pliable. Remove and lay it flat on a clean surface.

Roll the Spring Roll
Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to the top. Repeat with the remaining wrappers and filling.
