Beef Rendang Preparation

Prepare the Spice Paste
In a blender or food processor, combine the onion, garlic, ginger, red chilies, turmeric powder, coriander powder, cumin powder, and a pinch of salt. Blend until you have a smooth paste.

Cook the Beef
In a large pot, heat the vegetable oil over medium-high heat. Add the spice paste and sauté for about 5 minutes until fragrant.

Add Beef and Liquid Ingredients
Add the cubed beef to the pot and stir well to coat with the spice paste. Pour in the coconut milk, add the bruised lemongrass, galangal, torn kaffir lime leaves, brown sugar, and remaining salt.

Simmer
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 2 hours, stirring occasionally, until the beef is tender and the sauce has thickened.

Rinse the Rice
In a fine mesh strainer, rinse the jasmine rice under cold water until the water runs clear.

Cook the Rice
In a medium pot, combine the rinsed rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water has been absorbed.
