Cooking Rice

Rinse Rice
Rinse 1 cup of Thai jasmine rice under cold water until the water runs clear to remove excess starch.

Cook Rice
In a medium saucepan, combine the rinsed rice with 2 cups of water. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the water is absorbed.

Making Red Curry

Sauté Chicken
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add 1 cup of diced chicken breast and sauté until the chicken is cooked through and lightly browned, about 5-7 minutes.

Add Curry Paste and Coconut Milk
Stir in 2 tablespoons of red curry paste until the chicken and vegetables are well coated. Then, pour in 1 cup of coconut milk and stir to combine. Bring the mixture to a simmer.

Season and Garnish
Season the curry with salt and black pepper to taste. Once heated through, remove from heat and garnish with 2 tablespoons of chopped green onion.
