Method

Cooking Rice

  1. 1

    Rinse Rice

Rinse 1 cup of Thai jasmine rice under cold water until the water runs clear to remove excess starch.

  2. 2

    Cook Rice

In a medium saucepan, combine the rinsed rice with 2 cups of water. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the water is absorbed.

  3. 3

    Fluff Rice

After cooking, remove the saucepan from heat and let it sit, covered, for 5 minutes. Then, fluff the rice with a fork and set aside.

Making Red Curry

  1. 4

    Sauté Chicken

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add 1 cup of diced chicken breast and sauté until the chicken is cooked through and lightly browned, about 5-7 minutes.

  2. 5

    Add Vegetables

Add 1 cup of sliced bell pepper, 1 cup of julienned carrot, and 1 cup of broccoli florets to the skillet. Stir-fry for an additional 3-4 minutes until the vegetables are tender-crisp.

  3. 6

Add Curry Paste and Coconut Milk

Stir in 2 tablespoons of red curry paste until the chicken and vegetables are well coated. Then, pour in 1 cup of coconut milk and stir to combine. Bring the mixture to a simmer.

  4. 7

    Season and Garnish

Season the curry with salt and black pepper to taste. Once heated through, remove from heat and garnish with 2 tablespoons of chopped green onion.
