Dough Preparation

Make the Dough
In a mixing bowl, combine the all-purpose flour and salt. Gradually add water while stirring until a dough forms.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for at least 30 minutes.

Prepare the Filling
In a bowl, mix together the ground pork, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper until well combined.

Roll out the Dough
After resting, divide the dough into small balls. Roll each ball into a thin circle about 3 inches in diameter.

Fill the Potstickers
Place about 1 tablespoon of the pork filling in the center of each dough circle. Fold the dough over to create a half-moon shape and pinch the edges to seal.

Cook the Potstickers
In a large skillet, heat the vegetable oil over medium heat. Place the potstickers in the skillet and cook until the bottoms are golden brown, about 3-4 minutes.

Steam the Potstickers
Carefully pour in 1 cup of water and cover the skillet immediately. Steam the potstickers for about 5-6 minutes or until the water has evaporated.

Serve
Remove the lid and let them cook for an additional minute to crisp up the bottoms. Serve hot with soy sauce or your favorite dipping sauce.
