Cook the Rice
Rinse 2 cups of Jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions. Once done, spread the rice on a large plate to cool down. This can be done a few hours ahead or the night before.

Prepare the Pineapple
Cut the top off of the whole pineapple and hollow out the inside using a knife and a spoon. Be careful not to break the shell. Chop the pineapple flesh into small bits and set aside.

Chop the Vegetables and Sausage
Dice the carrots, chop the green onions, and dice the white onion. Cut the Asian pork sausage into bite-sized pieces.

Cook the Sausage
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the chopped Asian pork sausage and cook until browned, about 3-4 minutes.

Add the Rice and Pineapple
Add the cooled rice and chopped pineapple bits to the skillet. Stir everything together and cook for another 3-4 minutes, allowing the rice to heat through.

Season the Fried Rice
Pour the soy sauce over the rice and season with salt and black pepper. Mix everything thoroughly until well combined and heated through.
Serving

Serve in Pineapple Shell
Scoop the fried rice mixture into the hollowed-out pineapple shell. Garnish with chopped green onions on top and serve immediately.
