Prepare the Ingredients
Dice the carrots, slice the green onions, and chop the white onion. Set aside.

Cook the Pork Sausage
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium heat. Remove the casing from the pork sausage and crumble it into the skillet. Cook until browned, about 5-7 minutes.

Add Rice and Pineapple
Add the cooked rice and pineapple bits to the skillet. Stir to combine and cook for another 3-4 minutes.

Prepare Shrimp
In a bowl, combine flour, salt, and pepper. Dredge the shrimp in the flour mixture, then dip in the beaten egg, and finally coat with panko breadcrumbs.

Fry the Shrimp
In a large pot, heat the cooking oil over medium-high heat. Once the oil is hot, carefully add the breaded shrimp in batches. Fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.

Make Bang Bang Sauce
In a separate bowl, combine mayonnaise, sweet chili sauce, and Sriracha sauce. Mix well until smooth.

Toss Shrimp in Sauce
In a large bowl, toss the fried shrimp with the Bang Bang sauce until evenly coated.
Assembly

Prepare Pineapple Bowl
Cut a large pineapple in half lengthwise and scoop out the flesh, leaving a sturdy shell. Reserve the pineapple flesh for another use.

Spoon the fried rice mixture into the hollow pineapple halves. Top with the Bang Bang shrimp. Garnish with sliced lime wedges and serve immediately.
