Preparation

    Prepare the Broth

    In a large pot, combine the vegetable broth, star anise, cinnamon stick, cloves, ginger, and garlic cloves. Bring to a boil over medium-high heat.

    Simmer the Broth

    Once boiling, reduce the heat to low and let the broth simmer for about 20 minutes to allow the spices to infuse their flavors.

    Prepare the Tofu

    While the broth simmers, drain the tofu and press it to remove excess moisture. Cut the tofu into cubes.

    Prepare the Vegetables

    Wash and chop the bok choy, slice the mushrooms, and chop the green onions (keeping the white parts separate from the green tops).

    Cook the Noodles

    Cook the rice noodles according to the package instructions. Once cooked, drain and set aside.

Final Assembly

    Combine Ingredients

    After the broth has simmered, remove the ginger, garlic, and spices from the broth. Add the soy sauce, bok choy, mushrooms, and tofu to the broth. Cook for an additional 5 minutes until the vegetables are tender.

    Serve the Pho

    To serve, place a portion of the cooked rice noodles in a bowl. Ladle the hot broth with tofu and vegetables over the noodles. Garnish with chopped green onions and cilantro, and serve with lime wedges on the side.
