Preparing the Broth

1. Prepare the Broth

In a large pot, add 8 cups of water and the beef bones. Bring to a boil over high heat.

2. Once boiling, reduce to a simmer and skim off any foam that rises to the surface.

3. Peel and halve the onion and ginger. Add them to the pot along with star anise, cinnamon stick, cloves, fish sauce, and salt.

4. Simmer for at least 1.5 hours, or until the broth is flavorful. Add water as needed to maintain liquid levels.

5. Once done, strain the broth through a fine-mesh sieve into another pot, discarding the solids.

Cooking the Shrimp and Noodles

6. Prepare the Shrimp

Bring the strained broth back to a gentle simmer. Add the peeled and deveined shrimp into the broth and cook for 3-4 minutes until they turn pink and opaque.

7. In another pot, cook the rice noodles according to package instructions. Drain and set aside.

Serving the Pho

8. Assemble the Pho

In bowls, place a portion of rice noodles and ladle the hot broth with shrimp over the top.

9. Garnish with bean sprouts, chopped green onions, and chopped cilantro.

10. Serve with lime wedges on the side for squeezing over the pho.
