Preparation

    Prepare the Noodles

    Soak the rice noodles in warm water for about 20-30 minutes until they are soft but not mushy. Drain and set aside.

    Chop the Vegetables

    Thinly slice the yellow onion and green onions. Mince the garlic cloves.

    Prepare the Sauce

    In a small bowl, mix together tamarind paste, fish sauce, sugar, and lime juice. Stir until well combined.

    Cook the Protein

    In a large skillet or wok over medium-high heat, add a tablespoon of oil. Once hot, add the shrimp and cook until they turn pink, about 2-3 minutes. Remove from the skillet and set aside.

    Scramble the Eggs

    In the same skillet, crack the eggs and scramble them until just set. Remove and set aside with the shrimp.

    Stir-Fry the Vegetables

    Add another tablespoon of oil to the skillet. Add the minced garlic and sliced onions, stir-frying for about 1-2 minutes until fragrant. Then add the bean sprouts and green onions, stir-frying for an additional 2-3 minutes.

    Combine Noodles and Sauce

    Add the softened noodles to the skillet with the vegetables. Pour the prepared sauce over the noodles and toss everything together to coat evenly.

    Add Protein

    Return the cooked shrimp and scrambled eggs to the skillet. Toss everything together and cook for an additional 1-2 minutes until heated through.

    Garnish and Serve

    Serve the Pad Thai hot, garnished with crushed peanuts, cilantro, and lime wedges on the side for squeezing over the dish.
