Preparation

    Soak Noodles

    Soak the wide rice noodles in warm water for about 30 minutes or until they are softened. Drain and set aside.

    Prepare Sauce

    In a small bowl, mix together soy sauce, oyster sauce, fish sauce, brown sugar, and chili paste. Set aside.

Cooking

    Stir Fry Vegetables

    In a large wok or frying pan, heat 2 tablespoons of vegetable oil over medium-high heat. Add minced garlic and stir-fry for about 30 seconds until fragrant.

    Add Vegetables

    Add sliced bell pepper, julienned carrot, and sliced green onions to the pan. Stir-fry for 3-4 minutes until they are slightly tender.

    Scramble Eggs

    Push the vegetables to one side of the pan and crack the eggs into the other side. Scramble the eggs until fully cooked, then mix them with the vegetables.

    Add Noodles

    Add the soaked rice noodles to the pan and pour the prepared sauce over them. Toss everything together until the noodles are well coated.

    Finish with Basil

    Add the fresh basil leaves and toss well. Cook for an additional 1-2 minutes until everything is heated through.
