Marinating Chicken

Prepare the Marinade
In a bowl, mix soy sauce, lemon juice, minced garlic, brown sugar, curry powder, salt, and black pepper.

Marinate the Chicken
Cut the chicken breast into strips and add to the marinade. Cover and refrigerate for at least 1 hour or overnight for maximum flavor.
Preparing Peanut Sauce

Combine Ingredients
In a saucepan, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, minced garlic, chili paste, and water.

Cook the Sauce
Heat over medium heat, stirring continuously until smooth and thickened, about 5-7 minutes. Set aside.
Frying Shallots

Heat Oil
In a frying pan, heat oil over medium heat.

Fry Shallots
Add the thinly sliced shallots to the hot oil and fry until golden brown and crispy, about 3-5 minutes. Remove with a slotted spoon and drain on paper towels.
Grilling Chicken

Prepare the Skewers
Soak wooden skewers in water for 30 minutes to prevent burning. If using metal skewers, skip this step.

Skewer the Chicken
Thread the marinated chicken strips onto the skewers.

Grill the Chicken
Preheat a grill or grill pan over medium-high heat. Grill the chicken skewers for about 4-5 minutes on each side or until fully cooked.
Serving

Plate the Dish
Place the grilled chicken skewers on a serving platter, drizzle with peanut sauce, and top with fried shallots. Serve immediately.
