    Cook the Noodles

    Bring a pot of water to a boil. Add the lo mein noodles and cook according to package instructions, usually about 4-5 minutes. Drain and set aside.

    Prepare the Vegetables

    While the noodles are cooking, wash and slice the bell pepper, julienne the carrot, and chop the broccoli into florets. Set aside.

    Prepare the Sauce

    In a small bowl, whisk together soy sauce, sesame oil, minced garlic, grated ginger, sugar, and black pepper. Set aside.

    Prepare the Protein

    If using tofu, drain it, press it to remove excess moisture, and cube it into bite-sized pieces.

Cooking

    Stir-Fry the Vegetables

    In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the bell pepper, carrot, broccoli, and snow peas. Stir-fry for about 3-4 minutes until they are tender yet crisp.

    Add Tofu (if using)

    If using tofu, add it to the skillet with the vegetables and stir-fry for an additional 2-3 minutes until heated through.

    Combine Noodles and Sauce

    Add the cooked lo mein noodles to the skillet, then pour the sauce over the mixture. Toss everything together to ensure the noodles and vegetables are evenly coated in the sauce. Stir-fry for another 2-3 minutes.

    Garnish and Serve

    Remove from heat and garnish with sliced green onions. Serve hot.
