Prepare the Shrimp

Make the batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until the batter is smooth and has a thick consistency.

Heat the oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the shrimp
Dip each shrimp into the batter, ensuring it is fully coated before gently lowering it into the hot oil.

Fry the shrimp
Fry the shrimp in batches, avoiding overcrowding, for about 2-3 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and set them on a paper towel-lined plate to drain excess oil.

Mix the sauce
In a small bowl, combine the mayonnaise, sweet chili sauce, Sriracha sauce, and lime juice. Mix until smooth and well combined.
Assemble the Dish

Plate the shrimp
On a serving platter, create a bed of shredded iceberg lettuce.

Place the crispy fried shrimp on top of the lettuce.

Generously drizzle the Bang Bang sauce over the shrimp before serving.
