    Cook the Rabbit

    In a large pot, add the rabbit meat and enough water to cover. Bring to a simmer and cook for about 1-1.5 hours until the rabbit is tender. Remove from water and let cool before shredding.

    Cook the Bacon

    In a skillet, cook the bacon over medium heat until crispy. Remove from the skillet and let it drain on paper towels. Reserve some bacon fat in the skillet.

    Combine Ingredients

    In the same skillet with the reserved bacon fat, add the shredded rabbit, crispy bacon (chopped), grain mustard, sherry, quince paste, salt, and black pepper. Stir well to combine.

    Cook the Mixture

    Cook on low heat for about 20 minutes, stirring occasionally, until the mixture is heated through and the flavors meld.

    Cool and Serve

    Remove from heat and let the rillettes cool to room temperature. Transfer to a serving dish and refrigerate for at least 2 hours before serving. Serve with slices of brioche and pickled vegetables.
