Prepare the Dough
In a small bowl, dissolve the yeast in warm water and let it sit for about 5 minutes until frothy. In a separate bowl, mix the flour, sugar, and salt. In a saucepan, heat the milk and butter until warm, then stir in the yeast mixture and the egg. Gradually add the flour mixture to the wet ingredients and knead until a soft dough forms.
Rise the Dough
Cover the dough with a clean cloth and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
Shape the Beignets
Once the dough has risen, roll it out on a floured surface to about 1/4 inch thickness. Cut into squares or diamonds. Let the cut pieces rise for another 30 minutes.
Fry the Beignets
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). Fry the beignets in batches until golden brown on both sides. Remove and drain on paper towels.
