Make the Pierogi Dough
In a large bowl, combine 2 cups of all-purpose flour, 1/2 teaspoon of salt, 1 large egg, and 1/2 cup of water. Mix until a dough forms, then knead for about 5 minutes until smooth.

Roll and Cut the Dough
On a floured surface, roll out the dough to about 1/8 inch thick. Use a round cutter (about 3 inches in diameter) to cut out circles.

Fill the Pierogies
Place a spoonful of the potato filling in the center of each dough circle. Fold the dough over and pinch the edges to seal tightly.

Cook the Pierogies
Bring a large pot of salted water to a boil. Drop the pierogies in batches, cooking for about 5-7 minutes or until they float to the top. Remove and drain.

Serve
Serve the pierogies hot, topped with winter truffle smetana and additional sautéed onions if desired.
