    Prepare the Onions

    Thinly slice the onions. In a large pot, heat the olive oil and butter over medium heat. Add the onions, thyme, salt, and black pepper. Cook until the onions are caramelized, about 20-25 minutes, stirring frequently.

    Add Liquids

    Once the onions are caramelized, add the sherry and calvados. Let it simmer for about 5 minutes to reduce slightly. Then, add the veal jus and bring to a gentle boil.

    Prepare the Cheese

    While the onion mixture is simmering, grate the Comté and Gruyère cheeses.

    Assemble the Gratinée

    Preheat your oven to 200°C (392°F). Ladle the onion mixture into oven-safe bowls, and top each bowl with a generous amount of the grated cheeses.

    Bake

    Place the bowls on a baking tray and bake in the oven for about 10-15 minutes, or until the cheese is bubbly and golden brown.

    Serve

    Remove from the oven and allow to cool slightly. Serve hot with crostini on the side for dipping.
