Method
Preparation
Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, and salt.
Cut in Butter
Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.
Combine Wet Ingredients
In a separate bowl, combine the heavy cream, orange zest, and beaten egg. Stir to mix well.
Combine Mixtures
Pour the wet mixture into the dry ingredients. Gently fold in the chopped apricots until just combined. Do not overmix.
Form Scones
Turn the dough out onto a lightly floured surface. Pat it into a circle about 1-inch thick. Cut into wedges or use a round cutter to cut out scones.
Bake
Place the scones on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes or until golden brown.
Cool and Serve
Remove from the oven and let cool slightly before serving. Enjoy your apricot-orange scones warm!
