Prepare the Crab Cakes
In a mixing bowl, combine crab meat, bread crumbs, mayonnaise, egg, dijon mustard, Old Bay seasoning, salt, and black pepper. Mix gently until just combined.

Form the Cakes
Shape the mixture into two patties. Place them on a plate and refrigerate for 30 minutes to firm up.

Fry the Crab Cakes
In a skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the crab cakes and fry for about 4-5 minutes on each side until golden brown. Remove and drain on paper towels.

Assemble the Sandwich
Spread herb mayo on the bottom half of each burger bun. Place lettuce, fried crab cake, sliced tomato, beet relish, and minced preserved lemon on top. Finish with the top half of the bun.

Serve the fried crab cake sandwiches warm, garnished with extra beet relish if desired.
