Preparation of Tomatoes

    Prepare the Tomatoes

    Wash the ripe tomatoes thoroughly, then dice them into small cubes. Place them in a mixing bowl.

    Seasoning

    Drizzle the diced tomatoes with olive oil, sprinkle with sea salt, and add black pepper to taste. Tear fresh basil leaves and mix them in. Let the mixture sit for at least 15 minutes to allow the flavors to meld.

Prepare Ewe Milk Foam

    Soften Gelatin

    Soak the gelatin sheets in cold water for about 5 minutes until softened.

    Heat Ewe Milk

    In a saucepan, gently heat the ewe milk until it is warm but not boiling. Remove from heat.

    Incorporate Gelatin

    Squeeze out excess water from the softened gelatin sheets and add them to the warm ewe milk. Stir until fully dissolved.

    Create Foam

    Using an immersion blender, blend the ewe milk mixture until frothy. Season with a pinch of salt.

    Chill

    Transfer the foam to a container and refrigerate for at least 30 minutes to set.

Assembly

    Plate the Dish

    Spoon the seasoned tomato mixture onto small appetizer plates. Top each with a generous dollop of ewe milk foam.

    Garnish with additional basil leaves if desired, and serve immediately.
