For the Stuffed Zucchini Flowers

Method

Prepare the Tartlet Shells

  1. 1

    Make the Dough

In a large bowl, mix the flour and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Wrap in plastic wrap and refrigerate for 30 minutes.

  2. 2

    Bake the Shells

Preheat the oven to 375°F (190°C). Roll out the dough on a floured surface and cut into circles to fit your tartlet pans. Press the dough into the pans and prick the bottoms with a fork. Bake for 15-20 minutes until golden. Let cool.

Prepare the Lobster Filling

  1. 3

    Mix the Filling

In a medium bowl, combine the lobster meat, cream cheese, mayonnaise, lemon juice, chives, salt, and black pepper. Mix until well combined.

  2. 4

    Fill the Tartlets

Spoon the lobster filling into the cooled tartlet shells and set aside.

Prepare the Stuffed Zucchini Flowers

  1. 5

    Make the Filling

In a bowl, mix ricotta cheese, Parmesan cheese, garlic, salt, and black pepper until well combined.

  2. 6

    Stuff the Flowers

Carefully open each zucchini flower and fill with the cheese mixture. Twist the end of the flower to seal.

  3. 7

    Cook the Flowers

In a skillet, heat olive oil over medium heat. Add the stuffed zucchini flowers and cook for about 3-4 minutes on each side until golden.
