In a saucepan, combine water, butter, and salt. Bring to a boil. Once boiling, remove from heat and add flour all at once, stirring vigorously until the mixture forms a ball and pulls away from the sides. Let it cool slightly, then add eggs one at a time, mixing well after each addition until smooth.

Pipe and Bake
Preheat the oven to 200°C (400°F). Pipe small mounds of the choux pastry onto a baking sheet lined with parchment paper. Bake for 20-25 minutes until golden and puffed. Let cool completely.

Prepare the Pastry Cream
In a saucepan, heat the milk and saffron until just simmering. In a bowl, whisk together sugar, egg yolks, and cornstarch until smooth. Gradually pour the hot milk mixture into the egg mixture, whisking constantly. Return to the saucepan and cook over medium heat, stirring continuously until thickened. Stir in vanilla extract and let cool.

In a small saucepan, combine honey, saffron, and clementine juice. Heat gently until combined and slightly thickened. Remove from heat and let cool.
