Cooking Directions
- 1
Prepare the Coleslaw
In a large bowl, combine the coleslaw mix with the coleslaw dressing. Mix well and set aside in the refrigerator to chill.
- 2
- 3
Prepare the Batter
In a mixing bowl, whisk together the all-purpose flour, cornstarch, salt, black pepper, and baking powder. Gradually add the Smithwick's beer, mixing until smooth and slightly thick.
- 4
Heat the Oil
In a deep pot or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 5
Fry the Fish
Dip each haddock fillet into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil, frying in batches to avoid overcrowding. Cook for 5-7 minutes or until golden brown. Remove and drain on paper towels.
- 6
Fry the Chips
In the same oil, add the cut potatoes and fry for about 5-8 minutes or until golden and crispy. Remove and drain on paper towels. Season with salt.
- 7
Serve
Plate the fried fish and chips alongside the coleslaw. Enjoy with your favorite dipping sauce if desired.
